Chef Sergio Remolina

Born in Mexico City, Chef Sergio Remolina dedicates much of his time to studying both traditional and modern Mexican and Latin American cuisine. He is a consultant, restaurateur, and educator. He is the founder and owner of Culinary Performance Consulting, and Laurel Café.

Remolina previously served as the Director of the Latin American Studies program at The Culinary Institute of America and as the Vice President of Culinary for Taco Cabana. His culinary training took place in France and Mexico, and he has built a significant career in managing and advising hospitality businesses in Mexico and the United States.

Throughout his career, Remolina has been recognized with several awards and invited as a guest chef and presenter at events in Argentina, Bolivia, Guatemala, Canada, the USA, and Hong Kong. Since 2008, he has been a member of L’Academie Culinaire de France and was the opening chef for the Bocuse Restaurant in Hyde Park, NY. He has also earned two gold medals from the Societe Culinaire Philanthropique at the Salon of Culinary Art in New York City.
