Sergio Remolina Sanchez is a chef, consultant, and educator whose international career spans Mexico, France, and the United States. Trained in classical European techniques and deeply rooted in Mexican culinary traditions, he brings a global perspective to hospitality, culinary innovation, and business strategy.

Based in San Antonio, Texas, Sergio is a Chef Instructor and Assistant Professor at the Culinary Institute of America, where he develops the next generation of culinary professionals while remaining actively engaged in the hospitality industry. His academic work is complemented by hands-on operational experience as a restaurant owner, successfully guiding a concept from launch to financial stability.

As founder of Culinary Performance Consulting LLC, Sergio advises restaurants, hospitality groups, and food producers on creating concepts that are operationally efficient and financially sustainable. His expertise includes concept development, menu engineering, workflow optimization, labor and food cost management, and the implementation of systems that improve consistency, accountability, and profitability.
